Aromatic Whisky Madeira from the Madeira barrel
Madeira is a dessert wine named after the Portuguese island on which it is produced. It belongs to the ‘fortified’ wines, which means that alcohol – generally brandy – is added to it during the fermentation phase. This stops the fermentation process because yeast cells cannot survive an alcohol content of 16% ABV or more. This results in a wine with high levels of residual sweetness, which can then age to perfection in casks.
These casks are used later on to store SLYRS whisky that has already been aged for four to five years in conventional casks made from American white oak. During a finishing time of almost two years, the malt absorbs the fruity, light notes of this fine wine to create a unique symphony of flavours.
