How Bavarian Mountain Whisky is made

In the middle of the Bavarian Alps, between clear air and pure spring water, a whisky is created that combines tradition and modernity. Step by step, with patience and attention to detail, we shape our unique Bavarian single malt whisky - SLYRS - from local barley, mountain spring water and hand-picked barrels.

1. Barley malt from Bavaria

From the field to the barrel: the foundation of our whisky
Barley is the heart of every malt whisky. For SLYRS, we only use two-row spring barley from the Munich area - carefully selected and of the highest quality. After thorough malting in a special malting plant, it is gently kilned. This gentle drying gives our whisky its delicately spicy character. Together with pure mountain spring water and the clear mountain air, this creates the unmistakable Bavarian taste of SLYRS.

02. Purest mountain spring water

Naturalness in its purest form
The quality of a whisky stands and falls with the water used. SLYRS is very fortunate to have the purest mountain spring water right outside the distillery, so to speak. Our water comes from the Bannwald spring in the Schliersee Alps. Its purity and quality determine the unique taste of our Bavarian Single Malt Whisky in an outstanding way.

03. Slow fermentation

Our secret of depth
The variety of flavors is not the result of haste, but of patience. At SLYRS, fermentation takes several days - longer than at many other distilleries. With our specially developed fermentation process and home-grown whisky yeasts, we create the basis for the typical, fruity and spicy SLYRS aroma profile.

04 Aroma-preserving distillation

Craft with precision - drop by drop perfection
Distilling is not about speed, but about sensitivity. Our distillers distil very slowly and gently in traditional copper stills. This preserves the valuable aromas of the malt and allows them to develop into a clear, full-bodied distillate - the essence of SLYRS whisky.

05. Maturation in American white oak barrels

Wood that makes history
Cask maturation is the true creator of whisky. SLYRS is matured in high-quality, new American white oak casks from the renowned cask manufacturer World Cooperage in the Missouri Ozark Forest. The wood contains few tannins and gives the whisky its typically harmonious vanilla, caramel and wood notes.

During the toasting process, a fine layer of charcoal is created, which brings additional depth and warmth to the aroma. After maturing for four to six years, selected barrels are transferred to well-traveled wooden barrels - for example from Bodegas Tradición in Jerez - for special finishes. This creates fine rarities with an individual character.

Our pride and joy: the SLYRS Aged 18 Years matured in our own traditional barrels. And the SLYRS Mountain Edition which rests in American white oak at an altitude of 1500 meters on the Stümpfling - surrounded by mountain air, silence and time.
